Gastrobars – bars where you eat divinely

What is a gastrobar? You must meet at least three requirements. First of all, on the door there are no pictures of the dishes. Second, he works extensive hours and takes care in everything he does: good breakfasts, good set menus or dishes of the day, good dinners and drinks. The third requirement: pay special attention to seasonal products; the only way to offer good cuisine, really. These six bars meet the three requirements, and we assure you that you will eat the same or better than at your mother's house.

Innovative conception: Fabián Rios has opened a tapa-style bar serving Argentine cuisine. "In my country there is nothing like that," he says.

I buy: his idea is that of a meat bar whose tapas are Argentine cuts in 100-gram portions (starting at €5.5 per dish). Three colleagues and a table full of filleted rib eye, entrecote and vacuum steak. The meat levels are very high: the noble parts are imported, and also Galician and from Girona. There are empanadas made at the moment that make a difference. A bright space, covered for eighteen people under a very high ceiling, it is balsamic: the dialogue that is established between the good meat cooked to perfection, the chimichurri and the mojo picón is anthological.
